Mango fried rice has always been one of those dishes that brings me back to home. The added sweetness from the mango to the savoriness of the fried rice has a very unique taste.
For this recipe you will need 2 tbs of rice wine, 1 cloved garlic (minced), 1bs of ginger (minced), ½-1 tbs of crushed red chili pepper flakes, 3 cups of jasmine rice (cooked), 1 cup of frozen peas, 1 mango (sliced in cubes), ½ cup of peanuts (roasted), and 1 green onion sliced (for garnish).
The first step is to wash the rice and pop it into the rice cooker. As the rice cooks, get a non-stick skillet and add the rice wine vinegar and saute the garlic, ginger, and red chili pepper flakes (make sure it doesn’t get burnt).
Once the rice is done cooking, let it cool down for a bit and then add it to the skillet. After adding the rice, saute and mix carefully until the rice is heated thoroughly. Add the peas, mango cubes, and peanuts into the skillet and saute until all of the peas are heated.
This dish is very customizable, so if you want to add more crushed chili flakes to add a little more spicy kick to the meal then feel free to do so. Transfer the contents of the skillet to a dish and garnish it with green onions and an optional lime wedge.
This recipe is very healthy because it is 100% oil free. There are many ways to make mango fried rice but this is just the way I prefer to prepare it because of the healthiness factor of no oil. I hope this recipe is of help and please enjoy a very nice meal of mango fried rice.
