Fun Summer Smoothies!

A fun summer smoothie recipe (serves 2):

—1 cup frozen organic blueberries 

-1 cup frozen mango 

-1 1/2 frozen bananas

-2 cups of spinach

-3 tablespoons of avocado

-half cup coconut water

For smoothie bowl:

¼ cup of granola

1 tablespoon butter or seed butter (such as almond milk)

¼ cup goji berries

Instructions:

Put the spinach in the blender. Now, add the remaining ingredients (spinach blends easiest so it is prudent to add it to the blender first). Blend on high til you reach a smooth consistency (there are no more chunks), and according to your own tastes. If you want a smoothie bowl, keep the consistency on the thick side. The resulting color of the smoothie should be blue.

For a smoothie bowl:

Top your smoothie bowl with a nut or seed butter (I like almond butter), a sprinkle or granola and a shake of dried goji berries. 

Tips/Tricks/Swap-ins:

The avocado adds just the right amount of creaminess to a smoothie without disrupting the flavor. To achieve this same creaminess, you could add a 1/3 cup of Greek yogurt, but this will likely add tartness to the smoothie.

If you want a heartier smoothie, you could swap the coconut water with a nut milk (such as almond or oat). 

Peachy Keen (fun) Smoothie Recipe (serves 2):

Ingredients:

-2 cups frozen peaches

-1/2 banana 

-1/3 cup Greek yogurt 

-1/2 cup almond milk 

-1 teaspoon of honey

Instructions:

Add all the ingredients to the blender and blend on high until you reach a smooth consistency (you may have to add more almond milk—depending on what you want). 

I imagine this smoothie is perfect for hot, summer days. It’s ingredients evoke a sort of “peaches and cream” desert. The honey offsets the tartness of the Greek yogurt. The yogurt and almond milk add just the right amount of creaminess to the smoothie. Peaches, rightfully, get their chance to shine, and a half banana provides the smoothie just the stability it needs—without disrupting the peachy flavor.

My mom used to make my sister and I this smoothie after school (especially during the Spring). She would also often make this for us on Summer afternoons. Its salmon color made it especially fun to drink, and, to me, it was like a peach milkshake.
